Turnip and potato fritters

Ingredients

  • 1 medium turnip
  • 1 medium potato
  • 2 spring onions, finely chopped
  • 1 tablespoon chopped parsley
  • 50g feta, crumbled
  • 1 egg, lightly beaten
  • 2 tablespoons plain flour
  • 2 tablespoons olive oil

Method

  1. Peel the turnip and potato and chop into 1cm pieces.
  2. In a saucepan of boiling water, cook the turnip and potato for 15 minutes or until tender. Drain.
  3. Transfer the drained turnip and potato to a bowl and mash with a fork.
  4. Add the spring onions, parsley, feta, egg and flour to the bowl and mix until well combined.
  5. Heat olive oil in a frying pan.
  6. Spoon heaped tablespoons of the turnip mixture into the pan.
  7. Cook for 4 minutes on each side until golden.
  8. Transfer to a plate and serve.
