Radicchio, Avo & Mango Salad

Serves 6 Serving

Ingredients

  • 1 ripe avocado
  • 1 mango
  • 2 cups rocket leaves
  • 1 radicchio
  • 50g crumbled reduced fat feta cheese
  • ½ cup walnuts
  • Dressing:
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar

Method

  1. Cut avocado in half and remove seed. Remove skin and cut the flesh into slices.
  2. Cut mango into 2cm cubes.
  3. Wash rocket and set aside.
  4. Separate radicchio leaves, wash and roughly shred.
  5. To make the dressing, combine the olive oil and balsamic vinegar in a small dish.
  6. Add all ingredients to a salad bowl and toss gently to combine. Drizzle over salad dressing.
