Banana Ricotta Jaffle

Ingredients

  • ½ ripe banana
  • 2 slices raisin bread
  • 2 tablespoons smooth reduced-fat ricotta
  • 1 tablespoon crushed walnuts

Method

  1. Peel and slice banana.
  2. Spread the ricotta over 1 slice of the raisin bread. Layer banana slices evenly over the ricotta. Sprinkle with walnuts. Place the other slice of raisin bread on top.
  3. Place in a pre-heated sandwich maker.
  4. Cook until bread is golden brown (2-3 minutes).
  5. Allow to cool slightly before serving.

Tip: Wholemeal bread can be used in place of raisin bread, just add 1 tablespoon of sultanas to the filling.
