Baked bean bruschetta

Serves 2

Ingredients
1 tsp olive oil
2 spring onions, chopped
1 clove garlic, crushed
1 can diced tomatos, salt-reduced
1/2 punnet cherry tomatoes, halved
1 can salt-reduced four bean mix, drained
dash of Worcestershire sauce
1/2 tsp paprika
20g reduced fat feta, crumbled

 

Method

  1. Heat oil in a large frypan. Add onion and garlic, cook until onion is soft.
  2. Add tomatoes and simmer for 2-3 minutes.
  3. Add beans, Worcestershire sauce, oregano and paprika and simmer for a further 5 minutes.
  4. Serve on wholegrain and top with feta. Garnish with oregano.
