Bircher Muesli

Serves 4

Ingredients
1 apple
1 orange
1 1/2 cups rolled oats
1 cup reduced fat milk
2 tablespoons pepitas
2 tablespoons pistachios
200g raspberries (fresh or frozen)
200g reduced fat natural yoghurt

Method

  1. Grate apple. Zest and juice orange.
  2. Combine oats, milk, apples, pepitas and 1/4 cup orange juice in a bowl. 
  3. Cover and refrigerate overnight.
  4. Roughly chop pistachios.
  5. Stir 1/2 teaspoon orange zest through muesli, divide between serving bowls.
  6. Top with raspberries, yoghurt and pistachios.

Try: swapping raspberries for other seasonal fresh fruits such as strawberries or mixed frozen berries.
